Christmas Colors :: Easy and Healthy Salad

This is a great way to incorporate some fruits and vegetables into your holiday repertoire.  Simply toss your favorite salad greens with a homemade vinaigrette (1/4 cup each fresh lemon juice and white wine vinegar + 1 cup olive oil + a pinch of salt and pepper).  Then add small dabs of goat cheese and your favorite green and red vegetables + fruits ... i.e. celery, kiwi, avocado, berries, beets, green onions.  Enjoy!
