Scared of Squash?

I love butternut squash - it is so creamy and luscious! Here is my simple way to prepare it ::


Using a sharp knife cut the squash in half - doesn't matter if its not perfectly in half!


Look at that color!!

Using a melon baller or spoon scoop out the seeds and discard or even better - compost!

Bake in the oven at 350 in a glass dish with about 1/2 water in it

Pull out when you can pierce squash with a fork smoothly maybe 20-25 minutes - then when a bit cooler scoop out all the flesh into a bowl

Mash with a fork and add salt, butter and maple syrup!!
