Easy Weeknight Dinner

This is a really quick dinner.  It's chicken sausage that I prepared in my grill pan, paired with quinoa salad that can be served warm or at room temperature,

The quinoa salad is made by preparing quinoa according to package instructions, and then adding dressing to it while it's still warm.  This allows to quinoa to be flavored by the dressing.  I just made a simple oil + vinegar vinaigrette, with a squirt of lemon juice.  You can add any vegetables, nuts, or cheese at this point.  I simply used frozen peas that I'd warmed up, along with a can of rinsed/drained black beans.
