I am hungry all over again just looking at these pictures. I made this stew in a mad dash last night as it dawned on me that I had to cook the fish I bought the day before. I ran to the store at 8:30pm for parsley and wine. This was so easy :: onion, garlic chopped and sauteed in olive oil. Add 2/3 cup chopped parsley and then chopped tomato - really just as much as you like. Once vegetables are starting to wilt - add 1 and 1/3 cup water or broth and 2/3 cup dry white wine - I'm not sure what that means exactly and I added Pinot Grigio because that's what I like to drink. Once stew is simmering add fish cut up into large pieces. They will break down during cooking so no worries about size. Cook until the fish is flaky. Ladle over bread or rice!
