Cooking with Cast Iron





I pull out my cast iron grill/skillet when I make pancakes, tofu and chicken. I use the smooth skillet side for pancakes and tofu and just recently rediscovered the grill for grilling marinated chicken breasts. It was a big hit!


I pounded the chicken breasts to make them faster and easier to cook - then marinated them for 30 minutes in olive oil, lemon juice, salt and pepper. Placed them on the oiled grill and cooked and occasionally flipped them until golden. Delicious. Clean up needs a good scrubbing brush and soap. Don't go too crazy - you want to keep the iron seasoned.
