Summer Coleslaw

My favorite New Jersey girlfriend made this last weekend when we visited her at the shore.  It's a favorite family recipe of hers and we all loved it!  Makes a big batch.

Here's what you need:
For the dressing:
1/4 cup apple cider vinegar
1/4 cup sugar
1/2 tsp salt
1 tsp Dijon mustard
1/2 tsp garlic powder
2 TBsp poppy seeds
1 TBsp celery seeds
2 cups mayonnaise
For the slaw:
1/2 head red cabbage
1/2 head green cabbage
3/4 cup red onion
1 large carrot.
Prepare the dressing first in a large bowl.  Shred all the vegetables in a food processor.  You want the pieces of onion and carrot especially to be small.  Then toss all shredded veg in with the dressing.
