Some people associate this with the holidays, but I say: Why wait? We made these for a bake sale and they were a fabulous success. Teacher appreciation gifts? Yes, please!

Get a bunch of starlight mints, place them in a Ziploc storage bag and pound them into shards with a hammer. This is a great way to release any tension you may have! Set the mint pieces aside, and prepare your chocolate. I use a large bag of white chocolate chips. Place in large glass bowl, and microwave for one minute at 70% power. Remove, and stir, then put them back for another 30 seconds, again at 70% power. Stir until smooth (you may need another 15 seconds, depending on your microwave!). Then add about 3/4 of your mint pieces in and stir. Pour onto a piece of waxed paper or parchment paper. Then use the remaining mint pieces to stud along the top. This will cool quickly and harden. Then break it into pieces. Yum!
