So I'm faced with the following situation: hungry toddler, hungry mommy yada yada yada: you know the drill. Mommy wants something besides PB+J! In a pinch, I like to make toasted cheese sandwiches, but no bread on hand. Just pita rounds and string cheese. So I grabbed two pitas, unwrapped the string cheese and pulled apart the threads of cheese. (Yes, that sounds oddly satisfying!) Luckily the cheese is mozzarella and I've got pepperoni. So I add that and toasted both sides on the stove top (smearing both sides of the pita with my buttery spread prior to toasting). I let it cool just a few minutes before cutting so all the cheese loses some of that oozy quality. Delish!
